Special Brain Masala

STEPS OF COOKING

  1. Boil 2 whole pieces (250g) of goat brain in water for 10 minutes and discard the water. Remove top lining on the brain and chop it into small pieces.
  2. Heat ¾ cup (100ml) oil/ghee and fry 1 medium finely diced onion until light golden.
  3. Add 1 tbsp. garlic paste, 1 tbsp. fine strips (julienne) of ginger, 1-2 tbsp. chopped green chilies and 2 tbsp. Shan Special Brain Masala Mix mixed in 2 tbsp. of water. Stir fry for 2-3 minutes.
  4. Add the boiled brain and stir fry continuously for about 5-7 minutes.
  5. Add 3 tbsps. chopped fresh coriander (cilantro) in 2-3 tbsps. of butter and stir.

     
     SERVING SUGGESTION
     Serve with naan.
