Achar Masala

STEPS OF COOKING

  1. Add together 1 cup of water, 1 cup white vinegar, 1 packet Shan Achar Masala Mix and 1kg washed, dried and sliced green mangoes or mixed vegetables. Boil on very low heat until half tender. A thick masala paste should have formed at the end of the cooking.
  2. Add 2 cups (350ml) preheated and cooled oil/mustard oil and cook on very low heat until oil becomes hot but does not boil. Stir frequently.
  3. Remove, cool and preserve. Use after few days.


     TIPS FOR BEST RESULTS:

  1. Mangoes: Use raw green mangoes with firm white flesh and hard bone.
  2. Jar: Wash in boiling water and dry before use. Also wash hands and all utensils to be used in making the pickle.
  3. For mixed pickle use mangoes, green chillies, carrots and lemons.
