Chinese Egg Fried Rice

STEPS OF COOKING

  1. Boil rice in 8 cups water. When nearly* tender, drain, cool and set aside.
  2. In a large wok heat oil on medium heat. Add eggs, stir-fry / scramble for less than a minute and take it to one side of the wok.
  3. Add vegetables. Stir-fry for 1 minute and then mix the scrambled eggs.
  4. Add Shan Chinese Egg Fried Rice Mix and the boiled rice. Hold spoons in both hands, stir and toss the rice for 2-3 minutes, to mix all the ingredients.
  5. Cover and simmer on low heat for 2-3 minutes. Mix well before serving.

      For Chicken/Beef/Prawn Fried Rice

           Add 100 g thinly sliced and boiled meat in the above recipe in step No.4.


      Tips: Boil rice till ¾ done Use aged basmati rice
