Achar Masala
STEPS OF COOKING
- Add together 1 cup of water, 1 cup white vinegar, 1 packet Shan Achar Masala Mix and 1kg washed, dried and sliced green mangoes or mixed vegetables. Boil on very low heat until half tender. A thick masala paste should have formed at the end of the cooking.
- Add 2 cups (350ml) preheated and cooled oil/mustard oil and cook on very low heat until oil becomes hot but does not boil. Stir frequently.
- Remove, cool and preserve. Use after few days.
TIPS FOR BEST RESULTS:
- Mangoes: Use raw green mangoes with firm white flesh and hard bone.
- Jar: Wash in boiling water and dry before use. Also wash hands and all utensils to be used in making the pickle.
- For mixed pickle use mangoes, green chillies, carrots and lemons.
